Exclusivity and refinement
Amongst the dishes offered by the Fiorfiore Restaurant, the selection of Cinta Senese cold meats represents one of the most characteristic courses. The Cinta Senese pig, autochthonous race with of very old origins and nowadays very rare, is currently present in only a few selected breedings which aim at recovering ancient flavours, amongst these the Roccafiore Farm. Particularly prestigious cold meats derive from this typical pig: in fact, the Cinta Senese meat is homogeneously veined with fat, whilst in other races, the lean part and the fat part are clearly separated. For this reason, these cold meats appear to be extraordinarily fragrant and tasty.
The prestigious productions of the Roccafiore Cellar accompany the tasting of the exclusive cold meats and the other dishes suggested by the Fiorfiore Restaurant, besides a very wide selection of the best wines on sale:
- Bianco Fiordaliso (white wine), to accompany hors d’oeuvres and main courses of the Mediterranean tradition
- Fiorfiore Bianco (Grechetto di Todi) (white wine), perfect with main courses based on vegetables, white meats and soft cheeses.
- Rosso Melograno (red wine), ideal with cold meats, main courses with meat sauces and semi-soft cheeses
- Rosso Roccafiore (Sangiovese) (red wine), excellent with red meats and semi-hard cheeses.
- Collina d’Oro Roccafiore (Muscat), great wine for meditating, perfect with fruit desserts and dry confectionery, as well as cheeses with blue-green marbling and fois gras.
- Prova d’Autore, exclusive red wine obtained by the union of three vines (Sangiovese, Sagrantino and Montepulciano)
The refinement of the oenogastronomical offer of Fiorfiore Restaurant is obviously also characterized by strictly homemade beers, produced by Italian brewers, starting from the best raw materials; and to end a meal, Fiorfiore Restaurant suggests a trip discovering the best coffees in the world.
